Garlic Pork Chops with Vegetables and Brown Rice

Ninety percent of the time I improvise while I am cooking a new recipe regardless of whether it is similar or has nothing to do with another recipe. However, the improvised recipe is always inspired by either the season or the person/s I will be sharing my food with.

This recipe is inspired from love….!!!

Pork is inexpensive meat but it works miracles with gourmet cooking once you cook and serve it right and personally I love pork in a variety of versions. One of these versions is pork chops.

I like my pork chops to be cut thick and without the whole bone so I always ask my butcher to break the bone at the butchery and to cut the pork chops about 2 cm thick.

Although you can cook the pork with plenty of spices and ways I personally choose the basic; garlic, lemon, oil or butter and wine.

Today I have skipped some of the ingredients and I went straight for the basics; garlic lemon and butter. The result simply amazed me! I was amazed by how these three ingredients worked miracles for these plain pork chops.

In Cyprus there is a untold rule about meat; to serve meat with salad and deep fried potatoes.  In our case we have prepared our pork chops with vegetables and brown rice, which is a healthier version.

So jump into your kitchen for about 40 minutes and surprise yourself with this easy recipe…!!!

Ingredients:

  • 3 thick-cut pork chops
  • 3 peeled garlic gloves
  • a small bunch of chives
  • 1 tablespoon of salted butter – preferably Lurpac
  • the juice of a small lemon
  • Dry minced garlic

 

Directions:

 

Place the pork chops in a very hot pan and turn them occasionally for about 20 until golden brown.

Pour the lemon juice and garlic cloves and  turn your heat down.

In just five minutes put the butter and close the lid. Lower the heat even more for 10 minutes.

Your pork chops are ready and you can add a touch of decor with some rosemary.

Serve with rice or fried potatoes and salad.
